What Chocolate to Use to Make Homemade Candy Bars?

Pure Chocolate

  • Pure chocolate contains cocoa butter which melts at body temperature so it gives the chocolate a luxuriously smooth texture when it melts on your tongue.
  • You can buy pure chocolate bars, blocks, callets (which resemble chips but are not), pistoles, and chips.
  • Delicious and rich with decadence, the flavor.
  • Pure chocolate has a wonderful snap and shine when it is in temper.

Compound Chocolate

  • Compound chocolate, also known as Confectionery Coating, Candy Melts, Almond Bark, or Melting Wafers contains vegetable oils, usually palm kernel oil. They don’t have any cocoa butter.
  • This is referred to by some as “fake chocolate.”
  • This kind of chocolate melts quickly and produces candy bars that are snappy and shiny.
  • The wafers only need to be melted in the microwave or in a double boiler before being used.
  • Although the flavor is not nearly as good as pure chocolate made with cacao butter, it still has a passable chocolate flavor. For many of my treats, including my Candy Cane Chocolate Cups, I particularly enjoy using white compound chocolate.
  • Merckens Confectionery Coating, Wilton Candy Melts, Ghirardelli Melting Wafers, and Great Value Almond Bark are a few well-known brands of compound chocolate.
